I have made some excellent kimchi with chard (plus a few radishes for crunch). I think it would be too soft for kraut on its own but maybe nice mixed in with white or green cabbage?
Do you not like kale? Apart from my recent issues growing the stuff, I bloody love it. I think it was the first garden crop that I got really obsessed with. But then, I am a weirdo.

I've never even tried spinach. I don't think we have the climate for it. Thank goodness for chard!
