As a definite tofu sceptic - it's a texture thing! - I'm thinking that this recipe might encourage me into trying again. I'm looking at those thin, flavour coated slices with their browned edges and I think I might just be tempted!

It's really good cooked this way. Would love to hear if you try it!

Do you think unsmoked (ie regular firm tofu) would work too? I’ve also been looking for a way into tofu and tried whipped tofu this week (it’s good!) so have half a block left and am wondering if I can give this a go with that?

Yes, good point. You can use any firm tofu you like. I just love smoked tofu and think it's a good entry point for tofu sceptics. You might want to add a little smoked paprika to the herby oil, just to give it a bit of smokiness. Up to you...

Would love to hear what whipped tofu recipe you followed. I've not tried it but am keen!

What a revelation! I used the method to create a prawn substitute for a stir fry with firm tofu (Toofoo). Delicious, thank you Claire.

As a tofu-clueless, this is great! And a great read and always! I will be trying it as soon as I get back to England. Am sure Italy does have tofu, but it HIDES.
